Kim Hooni became the first Korean food restaurant chef-owner to have earned a Michelin star.



At his Korean restaurants in the middle of Manhattan, New York, there is always a long line up of customers wanting to get a table, even the Hollywood stars.


The world's best metropolitan city New York is a place where chefs from all over the world compete fiercely, so much so that there is a district named the "Hell's Kicthen"


How did Chef Kim Hooni capture the hearts of New Yorkers in the early 2010s, who were not very familiar with Korean food?


With his scientific knowledge, passion, solid foundation of French cuisine techniques, combined with Korean DNA and instintive intuition, Kim Hooni has developed his own style of cooking Korean cuisine.


His belief that Korean food will be the future of cooking is becoming more valuable in this "With Corona" era.


Q & A

Q. Why New York and why did you choose Korean cuisine?


As little time I spent living in Korea, I still felt my DNA was Korean and my blood, my ancestors and lineage as well.


I also thought New York City didn't have a Korean restaurant that represented its foundation of nature, nutrition and, flavors from natural fermentation.

It was with that thought, I opened DANJI in December of 2010.


Q. Can you give us some examples of menus that are popular among celebrities at HANJAN or DANJI?


A popular dish that we sell the most at HANJAN is our 'Tteobokki'. The recipe blends gireum tteokbokki and jeukseok tteokbokki. Its most famous fan happens to be V of BTS.

A popular dish at DANJI is the 'Crispy Tofu' and the two most famous fans of this dish happen to be Drew Barrymore and Natalie Portman.


Q. When did you know you wanted to become a chef?


The French Culinary School in Soho, Manhattan was my first ever cooking class and I remember cutting my finger on the first day of class and feeling really embarrassed. But having classmates who were already professional cooks really helped me push myself. I was forced to learn fast and catch up to all my classmates. At that moment, for the first time in my life, I wanted to be really good at something. I wanted to be a chef!


Q. What is one key piece of advice to those who have just stepped into the culinary field?


Please work at the busiest restaurant with the best ingredients and the most talented chefs in the kitchen. Find restaurants that cause you physical pain.
